In relation to your sitemap woes, you might want to try http://www.autositemap.com/

I use this on a couple of sites, and whilst pages are only added to the sitemap when visitors view them, it'll still get you round the issues you're experiencing.

Either that or Gsitemap creator - this is a desktop programme, but works well for larger sitemaps.
